Motto Azabu
Motto Azabu is a contemporary Japanese restaurant located in the historic Metropol Hotel in Moscow, inspired by the authentic gastronomic culture of Tokyo. Created by restaurateur Denis Ivanov together with Chizuko Shirahama, a Tokyo native, the project takes its name from one of the city's most prestigious neighborhoods, where tradition naturally blends with modern culinary trends.
The restaurant features a main dining room with an open kitchen, a spacious and light-filled terrace, an intimate speakeasy bar, and a Chef's Table, where Executive Chef Vadim Malkov personally presents omakase tasting menus.
The menu explores the cuisine of modern Tokyo, combining the principles of washoku—traditional Japanese cuisine centered on seasonality and the purity of ingredients—with yōshoku, Japan's interpretation of Western cuisine. The experience is complemented by signature cocktails by Alexander Levadny inspired by Tokyo's neighborhoods, an extensive selection of Japanese whisky and sake, and a wine list curated by Artem Vinichuk featuring exceptionally rare labels, many of which are available in only a handful of bottles in Moscow.

His experience at leading restaurants and five-star hotels, combined with professional stages in France, Spain, and Japan, has shaped a culinary philosophy rooted in tradition, precision, and deep respect for ingredients. At Motto Azabu, he expresses the gastronomic culture of modern Tokyo through dishes that seamlessly unite Japanese culinary heritage with contemporary global techniques.
